You can do so many delicious things with the pulp from both your juices and nuts and seed milks.

I made a raw tabouleh bowl with a nutty falafel (so so good!) but of course it’s only a super good bowl when tzatziki can be drizzled (poured really 😅) on top of it.

I made almond banana milk a few days ago and thought: let’s create my tzatziki with the pulp. It. Turned out deliciously. Here’s the recipe + a free quiz!)

Almond pulp tzatziki

1 cup almond pulp 
3/4 cup (180 ml) water
1/4 cucumber, chopped
2 tbsp lime juice
1 garlic clove, minced
1/4 tsp fleur de sel
1/2 cucumber, grated
0.35 oz/10 g fresh mint, finely chopped

Method
Blend all the ingredients, except the grated cucumber and mint, in a high-speed blender until smooth.

Add the grated cucumber and mint to a bowl.

Pour the tzatziki in the bowl and mix until combined.

Drizzle (or pour) this on top of a salad, dip your leafy greens and veggies, or use it as a spread with wraps👌
